Chicken in creamy orange sauce

This tasty and yummy chicken recipe is based on a traditional Danish recipe as well as inspiration from Indian cuisine with curry, orange and nuts as ingredients. The dish is ideal for both an easy dinner at home and for larger parties, because the dish only needs to go in the oven.

Here is what you need:

  • Chicken pieces (about 1-2 pieces per person, depending on size)
  • 1 onion
  • 500 g mushrooms
  • 1 Pepper fruit
  • 2 oranges
  • A handful of nuts (cashew nuts or pistachio nuts - depending on your mood)
  • Cream and a bit of milk
  • Madras Curry powder
  • Fresh dill

Put the chicken in an oven proof plate in the bottom of the oven. After about 15 minutes you add the onions cut in rings, mushrooms and pepper fruit i slices. Pour cream and milk over the chicken, until the chicken is half covered. You can choose only to use cream depending on how thick/ fat you want the sauce. Milk is a good alternative, and by just mixing in a little milk you still achieve the rich taste and consistency.

Slice the oranges or lemons (without the zest) and chop the nuts and spread them over the chicken in the plate. Press also a bit of orange juice over the dish. Add salt and pepper and some curry and dill. The dish should be baked in all for about 1 - 1½ hours. Boil basmati rise or jasmin rise and place the crispy on top of the rise on a plate together with the sour creamy orange sauce.
